We’ve taken the much beloved pimento cheese dip and made it into a breakfast biscuit called the Pimento Cheese Sandwich with Egg and Bacon. How can we not win with this combination!
This protein packed pimento cheese sandwich with egg and bacon is the perfect on-the-go breakfast or snack. Freeze the breakfast sandwiches for a quick meal, faster than going through the drive-thru.
How To Make Pimento Cheese Sandwich With Egg And Bacon
Buy store bought or make our homemade pimento cheese dip.
Cook the bacon on a foil lined baking sheet at the same time as the biscuits. The bacon will need to cook at the 350 degrees for 15 minutes with the biscuits. Then remove the biscuits, up the oven to 400 degrees and continue cooking the bacon for about 10 more minutes or until done to your liking.
We used refrigerated biscuit dough (Pillsbury Buttermilk to be exact) and baked them.
Then made some scrambled eggs On The Go Bites Style. Basically you want to cook the scrambled eggs almost like an omelet and fold it into quarters. This way the scrambled eggs don’t spill all over the place when eating the pimento cheese sandwich.

Wash the tomatoes and jalapenos. Slice the tomato into ¼” slices. Slice the jalapenos thinly, about 1/8”. Be very careful when slicing the jalapenos. Make sure to wash your hands with soap and water immediately. DO NOT TOUCH YOUR EYES until you’ve washed your hands. You won’t realize the chili oil is still on your fingers and it will sting your eyes.
You can also just use jarred jalapenos, regular or pickled. You’ll find the jarred jalapenos in the canned vegetable section of the grocery store.
Store Bought Condiments
If you buy a tub of pimento cheese at the grocery store it may need a little doctoring, especially if you like a nice kick to it. Just add about ¼-1/2 teaspoon cayenne pepper to 2 cups pimento cheese and stir well. Or add a Tablespoon of hot sauce.
Bacon, I like the thick cut because it holds up well on a sandwich.
What’s The Hottest Hot Sauce?
Hot sauces vary in heat so be careful which one you use. Here’s a very unscientific table of well known mild to hotter hot sauces:

Pimento Cheese Sandwich With Egg and Bacon
A complete breakfast for on-the-go. Pimento cheese, egg, bacon and jalapenos make a great southern breakfast!
Ingredients
- 2 cups pimento cheese store bought or see notes for homemade
- 8 large biscuits we used Pillsbury Buttermilk from the refrigerated section
- 8 large eggs
- 8 slices thick cut bacon
- 2 large tomatoes sliced
- 2 medium jalapenos, optional sliced
- 4 Tablespoons unsalted butter for biscuits
Instructions

Preheat oven to 350 degrees. The biscuits will cook for 15 minutes. Then remove the biscuits when golden.
Cook the bacon in a single layer on a foil lined baking sheet at the same time as the biscuits. The bacon will need to cook at the 350 degrees for 15 minutes and then an additional 10 minutes at 400 degrees.

Increase the oven to 400 degrees and continue cooking the bacon for about 10 more minutes after removing the biscuits or until done to your liking. Remove bacon from the oven and remove to a paper towel lined plate, blot dry.

Crack an egg into a bowl. Add to a small skillet, about 6” diameter over medium-low heat. Cook for about 1 minute. Lift an edge of the cooked egg with a spatula, allowing the uncooked egg in the center of the pan to pour underneath the cooked egg. Do this 4 times around the pan. Cook about another 30 seconds or until the egg is set.

Fold cooked egg in half like a half moon and in half again into a quarter circle. Adjust heat if this step takes longer or shorter than 2 minutes.

Wash the tomatoes and jalapenos. Slice the tomato into ¼” slices and sprinkle with kosher salt. Slice the jalapenos thinly, about 1/8”.
Be very careful when slicing the jalapenos. Make sure to wash your hands with soap and water immediately. DO NOT TOUCH YOUR EYES until you’ve washed your hands. You won’t realize the chili oil is still on your fingers and it will sting your eyes.
