The Leftover Shish Kabob Sandwich (kabab or kebab) packs the protein of meat and the nutrition of vegetables in a tidy little package that’s easy to eat on the go. No need for side dishes.
You can either use leftover shish kabobs, or make freshly grilled meat and vegetables or use any leftover cooked meat and vegetables. This is one of those recipes that you should use your imagination and fly with it.
How To Make A Shish Kabob Sandwich
Well of course you need to start with the shish kabob itself. I use the leftover shish kabobs and make the meat and vegetable sandwiches for either dinner within the next two days or for lunch. Usually it’s my lunch because I rarely have enough leftovers for the entire family to have dinner.
If you don’t have leftover kabobs and need to make them, use our easy 30 minute shish kabob recipe here. Keep in mind this recipe is for 30 minutes hands on time but requires a couple of hours for marinating.
And don’t get caught up in the shish kabob name, any leftover meat and/or vegetables can be used here. Personally I love the grilled taste, but oven roasted or stovetop sautéed vegetables will work as well.
What Type Of Meat And Vegetables Are Best For Shish Kabob Sandwiches
Beef, chicken, pork or lamb all work well, it’s a matter of preference. For beef I like sirloin and for chicken I like thighs.
Great ideas for vegetables are onions, red or yellow bell peppers, cherry tomatoes, mushrooms and zucchini.
The meat needs to be cooked, but how it’s cooked is up to you. I love the grilled taste for shish kabob sandwiches, but roasted, seared, pan fried, whatever method, as long as it’s cooked.
The vegetables can be washed and raw, but again, I prefer them cooked, specifically grilled or roasted. Oven roasted is just fine. If you aren’t using leftover vegetables, then toss the raw vegetables with olive oil, salt and pepper and cook until done. Throw the pan in a 400 degree oven for about 15-20 minutes and the vegetables should be done to perfection.
What Type Of Sauce To Use For Shish Kabob Sandwiches
We suggest using Boursin herb cheese spread. It adds just the right amount of punch without overwhelming the main ingredients. If you don’t have Boursin or don’t want to spend the money, it’s a little expensive, then use a whipped herb cream cheese. Or add your own chopped herbs to regular cream cheese.
Or use any of these sauces which are great additions as well:
Herbed ricotta cheese
Lemon mayonnaise
Just plain ole’ mayonnaise
How To Make A Leftover Shish Kabob Sandwich Portable and On The Go Lunch or Dinner
Drop the sandwich in a parchment paper bag, wrap in parchment or wax paper or use a resealable plastic bag. If you will be putting the shish kabob sandwich in a back pack or briefcase while transporting where the sandwich can get crushed, then use some type of rigid container.
Leftover Shish Kabob Sandwich
Make your leftovers work for you. Leftover shish kabob sandwiches pack protein and nutrition and take only 5 minutes to make.
Ingredients
- Leftover shish kabobs or other cooked meat and vegetables
- 1 Handful Arugula or mesclun lettuce
- 2 Slices Multigrain bread or favorite roll
- 2 Tablespoons Boursin garlic and fine herb cheese or favorite herb cream cheese
Instructions

Toast bread.

Slice the meat and vegetables into smaller, flatter pieces so that they lay nicely on the bread, that way you won’t lose a bunch of filling when biting into the sandwich.

Put on a paper plate (or microwave safe plate), cover loosely and microwave in 30 second increments until it’s the temperature you like.

Spread toast with the cheese, layer with the arugula or lettuce, top with vegetables and finally with second slice of bread.
Bite and enjoy!

It’s always better to underheat than overheat the ingredients, otherwise they can get tough.
