You can make the pimento cheese stuffed okra using store bought pimento cheese and a jar of pickled okra in a few minutes. Or you can make your own homemade pimento cheese (only about 5-10 minutes) and pickle your own okra (a few minutes prep and at least 48 hours to pickle).
How to Make Pimento Cheese Stuffed Okra Appetizer – Part Of Our Easy Finger Food Series
Assuming you are buying a jar of pickled okra (in the canned vegetable aisle of your grocery store, probably near the pickles), slice the okra pod lengthwise, being careful not to cut through the bottom. Remove most of the seeds and pat dry with a paper towel. Don’t worry if a few stray seeds remain.
Spread about a teaspoon of pimento cheese in the okra pod and lay on serving tray. You might have to press down so that the okra pod sits flat.
It’s nice to put a light sprinkle of paprika for color, not too much or it will flavor the appetizer.
Also sliced green onion or chives adds some nice color and a finishing touch.
